Heartwood tends to have a lighter color. CHARACTERISTICS: Trees tend to grow up to 6 feet in trunk diameter and 50 feet in height. For this reason, long and wide plates are widely available. HEARTWOOD COLOR: when freshly cut, the European beech has an off-white to very pale brown color, but sun exposure darkens in light red-brown. Trees growing in the colder areas tend to give trunks with a darker core color, commonly known as the "red heart", often with darker streaks. It is a common practice in southeast Europe to stew the beech in a fresh state, which changes the color permanently in pink or light red.
